The olive tree has been part of mankind’s history from the early beginnings. The first sign of life seen by Noah after the Deluge was the branch of an olive tree brought back by a dove; religious ceremonies anoint with olive oil, and even today when one sees an olive branch, it symbolizes peace and honour.
About 3000 years ago, both the Greeks and Romans discovered the exceptional culinary aspects of olive oil. By the 18th century, olive trees were introduced to North America and by the 1800’s immigrants began incorporating it into American cooking. There are over 100 varieties of olive trees and about 90% of them are found in the Mediterranean basin.
