Pricing Differences
One may notice that even within the same grade, there may be substantial
price differences, especially within the extra virgin olive oils.
The method which olives are removed from the trees can have a big
impact on the price. The olives may be picked off the ground after
maturing, captured in nets set below the branches or combed into
the nets by workers on ladders. The most expensive method, of course,
is picking each olive individually, thus protecting it from bruising,
which triggers acidity. Some methods will produce less bruising therefore
less oxidation that might affect the taste. Years before a tree yields
its first fruit, early frost and strong winds can sometimes have
a negative effect on the price.
