Olive oil is made up of 77% monounsaturated fat. Research shows that olive oil, when used in place of saturated fat in a well-balanced diet, may actually lower the risk of heart disease by reducing the level of harmful low density lipoprotein (LDL) in the bloodstream by carrying it to the liver and leaving the high density lipoprotein (HDL), or "good" cholesterol, intact.
