Balsamic Vinegar of Modena
Balsamic Vinegar from Modena is traditionally made from white and
sugary Trebbiano grapes, grown on the hills of Modena. The
low hill around Castelvetro is the treasure island for this grape.
Custom demands that the grapes be harvested as late as possible to
take advantage of the warmth that nature provides. The vinegar is
made from quality grape must, which is cooked until it has reached
the right concentration. The product is then filtered and placed
into barrels of different sizes and wood, then aged for several years,
without the addition of any other spices or flavorings. Of dark brown
colour, bright, thick but syrupy, its fragrance is distinctive and
intense; it has a well balanced and harmonious bitter sweet taste.
The number of years that it is aged and the number of times it changes
casks make it very labour intensive and time consuming, thus driving
the cost up. Also the longer the aging process, the less of vinegar
remains. For example, after 10 years, a producer looses approximately
40% of their production.
Balsamic Vinegar can be used as a salad dressing or to flavour many
dishes: it is excellent on grilled meat, scaloppini, parmesan cheese,
or on a fruit salad. Also according to the old tradition, it can
be used following your own taste and creativity in cooking.
